All food establishments, catering establishments, commercial food preparation facilities, meat processing facilities and other such businesses which generate sanitary sewage containing oil, fat or grease shall have and maintain grease removal equipment that meets the requirements of this article.
A. 
New food establishment businesses. All newly constructed food establishments within the City of Hackensack shall install a grease interceptor or grease trap on all grease-generating equipment waste lines as determined by the Plumbing Subcode Official, and such traps shall be in conformance with the Plumbing and Drainage Institute (PDI) standard 101 or equivalent and/or as required by the most current edition of the Uniform Construction Code and the National Standard Plumbing Code.
B. 
Existing food establishments which are identified by the City of Hackensack or BCUA officials as not complying with § 141-21A shall be required to modify their existing plumbing facilities with a grease interceptor or trap, as determined by the code enforcement official, that meets the requirements of § 141-21A. Said modification shall be commenced upon delivery of a written notice issued by the City of Hackensack or the BCUA.
C. 
Maintenance. Grease interceptors and grease traps in all businesses within the City shall be cleaned with sufficient frequency to ensure that grease and oil are not discharged to the City sewer system.
D. 
Maintenance logs. Each business with grease removal equipment shall maintain a maintenance log.
(1) 
The maintenance log shall detail each date that the grease trap or removal equipment has been checked and cleaned as specified by the Department of Health.
(2) 
When required by the Department of Health, the log shall include proof of proper disposal of grease removed from said equipment.
