GENERAL REFERENCES
Retail food establishments — See Ch. 117.
The Health Officer shall conduct a food handlers'
training program once a year. Additional courses for specific violators
or complaints may be required by a food establishment at the direction
or order of the Board of Health. All courses given by the Health Officer
shall be in compliance with the New Jersey Department of Health guidelines
for food handler course training programs.
A.
All retail food establishments are required to maintain
in their employ at least the specified number of personnel who have
attended an approved course of instruction for food handler training.
Owners and managers shall notify the Health Department when they are
no longer in compliance with the required number of course attendees.
B.
Records are to be kept of those who have attended
approved courses.
C.
Duration of certification shall be two years from
date of course completion.
Establishments shall provide personnel to an
approved food handler course training program in the following manner:
A.
Takeout and miscellaneous establishments: one person
per shift.
B.
Restaurants of 49 seats and below: one person per
shift.
C.
Restaurants of 50 seats and above: two persons per
shift.
D.
Supermarkets: one store manager and one person from
each department per shift.
E.
Hotels/motels: two persons from each food-handling
department or restaurant per shift.

A.
The following retail food establishments shall be
required to conduct biweekly self-inspections of the establishment
on forms which are designed, approved and provided by the Borough
of Park Ridge Board of Health. The establishments are as follows:

Responsibility for biweekly self-inspections. The
owner, highest ranking manager, supervisor, crew chief or supervising
individual actively involved in the daily operation of the food establishment
shall conduct the biweekly self-inspection of the establishment and
shall fully complete the self-inspection report for the establishment.
All deficiencies noted in the report shall be corrected immediately.

Any establishment not in compliance with any
provision of this chapter shall be subject to the following fines
per offense:
The Board of Health may suspend the retail food
establish license of any person convicted of violation of this chapter
for a period not more than three days, pursuant to the authority of
the Board of Health to license and regulate food establishments as
provided by N.J.S.A. 26:3-31c.
